One of the times I miss the US most is the first week of fall, when that first bite hits the air in the mornings and people start pulling out scarves and boots from the backs of their closets and the leaves haven't quite turned yet but you can tell they will be soon. This time of year always brings the nostalgia pretty hard, and usually I cope with it by taking long walks in the park with the BF, stopping for coffee and a snuggle, and, of course, baking.
This year, the BF just happens to be abroad – back in the States, actually – for a sort of med-student study-abroad program. I've been handling the separation pretty well, due mostly to being run off my feet with work, book stuff, and general back-from-vacation admin, but when the leaves started turning I did start to pine a bit (no pun intended). Still, I was determined not to mope (or eat my feelings any more than I'm already wont to do); I may not be able to take long, chilly walks with my guy, but I can still bake, dang it!

I Made A Real, Frosted, Layered Birthday Cake (and It Only Took Two Attempts and About a Million Eggs...)!
Last Friday my company had a 'wine and cakes' party in our department, celebrating the first birthday of the imprint I work for. Now, as someone who often brings homemade baked goods in to the office, I expected to be asked to make something, which I was happy to do. What I didn't expect was being volunteered to bake a birthday cake, which to most people might just mean a cake but which translated in my head to many-layered cake of wonder with homemade icing and decoration, which is something I'd yet to attempt. Still, I figured it would be a good opportunity to try something new (namely, making a fancy icing).
But then two things happened to make the plans much more stressful. The first was that my friend Tess, who works in the marketing department, asked me to use a recipe from one of our books, which wouldn't in itself be a problem but I had been hoping to use a tried-and-tested American recipe, or at least one with tons of online reviews – of course I agreed, though. And the second thing was that my very well-meaning friends 'bigged up' my baking in a company-wide email. And of course, as we all know, there's nothing like a little outside pressure to make a cake fall flat.

Signs of Growing Up: My First Meringues
Pin It
I had a bunch of girlfriends over for dinner a couple weeks ago, and one of them (whom I nonetheless love very much) is a serial dieter. Not in a fad-diet kind of way, more in a oh-no-I-shouldn't kind of way. It makes me sad, since I show my love through sugar and butter, but I was determined not to either a) do without dessert at my dinner party or b) make her watch everyone else eat pound cake while she tried not to salivate. I did a bit of research, skipped a lot of recipes that involved Splenda or other unnatural ingredients (no offense to people who use that stuff, but I always find I can taste the difference, and anyway my dieter-friend is a bit of a purist), and wound up back at Joy the Baker, where I reacquainted myself with a recipe I'd bookmarked weeks before, for vanilla bean and cocoa nib meringues.

So Easy It's NUTS: Spiced Almonds for Snacking
Pin It
This recipe was inspired back in November by a friend of a friend, who showed up at a pub quiz I attended with a gallon bag full of holiday-spiced almonds, which she'd made herself. I had a cold, so I didn't want to be reaching into the bag all night, but I wanted to try them to be polite, so I had my friend Sophie tip a few nuts into my palm. And then a few more, and a few more... all I can say is, thank god for that cold and my reluctance to pester Sophie, or I would have eaten the whole damn bag!
I asked the girl how she'd made them, and she basically listed a bunch of spices, some salt, and an egg white as the ingredients. I wasn't paying enough attention to write the spices down, but they were your baking basics: cinnamon, nutmeg, maybe some cloves (which I tend to skip). The minute I got back to London, I bought a jumbo bag of raw almonds – I was all set to make my own amazingly addictive roasted nuts. And then I put the nuts away in the cupboard, in the midst of a tidying frenzy, and I promptly forgot about them.

The 'Other' Thanksgiving Dessert: Apple Crisp
Pin It
You guys already know I'm obsessed with pumpkin, and especially with my family's pumpkin pie. So of course when I was home in San Francisco for Thanksgiving I ate a ton of the stuff. But what you don't know is that there's another dessert my family serves every year, and it's not pecan pie (we do serve that sometimes, in which case it's a third option) – it simply has to be something fruity.
My mom and her sisters, the current matriarchs of our big, female-dominated clan, aren't super big on sweets. They're salt folk, and they often skip dessert altogether on Thanksgiving, preferring to eat a slice of pumpkin pie at 6am the next day, for 'breakfast' (my mom never eats breakfast, besides these rare morning-after occurrences). So if there's going to be another dessert on their table, they require it to be something a bit less sweet, less rich, more fruit-based, and that usually means an apple crisp.

Delayed Gratification: Blueberry Boy Bait
Pin It
When I first saw this recipe forever ago on Smitten Kitchen, I immediately bookmarked it. I mean, cake batter, fresh blueberries, cinnamon topping, and a cute name? Sold, sold, and sold again.
But then it got lost in the flood of recipes I was bookmarking every day, and I forgot about it. Until my friend Aine asked me on facebook if I'd ever heard of it, and the desire came rushing back. Oh, Boy Bait, I lamented, how could I ever have forgotten you?

Fall Baking, Without the Pumpkin: Dairy Free Spice Cookies
Pin It
The air is biting, the leaves are turning, and the adolescent swans down on the canal are finally starting to turn white, which means two things: 1. the swans are currently a mottled grey-white, which is adorably hilarious, and 2. it's time to bust out the fall recipes!
Now, I'm not the most creative cook, so fall recipes, for me, usually just involve pumpkin. I love pumpkin. Pie, bread (or bread, or bread), muffins, oatmeal – you name it and put pumpkin in it, I'll eat it.

Cinnadoodlesnaps!
Y'all know how much I love cinnamon, right? Have we talked about this before? Oh, yes, we have. A lot. So I ask you this: how is it possible that I never tried to make gingersnaps with cinnamon taking the lead? HOW?
Okay, it doesn't matter how. We'll just chalk that up to yet another brainfart on my part. The point is, dear people, I've now tried it...and I'm not sure I'll ever be able to go back. The cinnamon, oh, god, the cinnamon has me swooning.

Baking for others: Cinnamon Bun Bread Semi-Fail
Pin It
Well, we're back from San Francisco. And while I'm not stoked about having to leave my friends and family, I am looking forward to getting back into a routine with work and writing. And, of course, blogging!
I think my stomach is looking forward to a routine as well; we ate so much good food in NorCal, which made my mouth extremely happy but my body has gone all soft. I'm sure it hasn't helped that I skipped my usual daily pilates in exchange for more delicious food. Mmmmmmmm...

Is there anything cinnamon doesn't improve? Chocolate-Chip-Cinnamon-Sugar Cookie Bars
Pin It
Sometimes, I'm hit with a stroke of genius.
And then, more often than not, I fail to execute my genius perfectly...and my fabulous idea turns out...not as fabulous as I'd envisioned.
BUT, sometimes, even though it's not what I expected, it's still delicious, if crumbly/messy, and the bf still eats it all. This was one of those times, and thank goodness for that because wasted chocolate chip cookie dough is a travesty.

When in doubt, throw in some chocolate!

I made muffins for class the other day. I wanted to bake something, but I didn't know what. I didn't really have time for cookies or cake or anything that required multiple steps, and one of my classmates is dairy-intolerant, which can be a difficult work-around with some baked goods, so I went with muffins.
I didn't really have a plan. I had a basic muffin recipe, for which I swapped water for the milk, and I had some spotty bananas. So I just kind of winged it.

For Broseph: Snickerdoodle Blondies
Pin It
When my brother read last week's post on savory things, he was less than thrilled. Even though he loves ceviche, it seems he reads this blog for the sugar and butter, not the olive oil and salt (mmmmmmm salt). So, for my brother, because I love him (yes, I said it, don't blush, now!) and because he makes me laugh more than anyone else I know: snickerdoodle blondies.
It's no secret that Snickerdoodles have always been a favorite of mine. They're sweet without being too rich, spiced without being too spicy, and just the right combo of soft and chewy. Not to mention how easy they are. But you know what's even easier? Blondies.
