Another Win for Laziness: Chocolate Chip (Etc) Cookie Bars

Chocolate chip cookie bars with Nutella

The first time, I made them because I needed something easy and transportable for a graduation party and I knew I wouldn't have time to wait for the butter in my freezer to soften, or to make multiple batches of drop cookies.  I googled 'melted butter cookie bars' and voila!  Bloggers to the rescue, as usual.

The recipe was super simple and I had all the ingredients, plus some pecans I thought would enhance the flavor of half the bars (we have a friend with a nut allergy so I wanted to leave half plain), and nobody was expecting cookies so the pressure was off.  I gave it a go and an hour later my companion and I were burning our fingers trying to 'test' the batch.

Once we were able to try a bite, we agreed: these things are good.  So good that I ate three that night, which is unusual for me – often when I bake something, no matter how tasty it is, I tire of it quickly and am obliged to convince someone else to eat the rest.  It's no coincidence that I favor tall boyfriends with hollow legs ;)

In this case, though, not only did I eat a bunch of the baked good in question but I also started thinking about making them again almost immediately upon leaving the party (I nearly brought home a couple bars but I stopped just short of embarrassing myself that much).  So when I was gifted two glass jars of Nutella from Italy and was antsy to use one as a wine glass, I knew exactly how to put the Nutella inside to good use.

The point is this: these bars are infinitely adaptable.  They were delicious with pecans, indulgent with Nutella, and likely would be even more toothsomely tasty with oats – that's my plan for next time!  In other words, make these.  As soon as humanly possible.

Chocolate Chip (Etc) Cookie Bars
    Adapted for pecans/Nutella from Em's Bytes  
    (I doubled the recipe the first time and used an 8x13 pan – ain't nothin' wrong with twice the amount of this goodness)

Preheat oven to 350F/175C and grease an 8" pan, square or cake, whatever you have.
 

Mix together in a large bowl:
     1/2c (1 stick) unsalted butter, melted
     1/4c sugar
     1/2c brown sugar


Beat in: 
     1 egg
     1 tsp vanilla

 
Add and stir until combined:
     1 c flour
     1 tsp baking powder
     1/4 tsp salt


Stir in:
     1c semi-sweet chocolate chips

     1c chopped pecans (optional – you can also place them on top of the dough once it's in the pan, if you fancy the look or want to limit their reach) 

Spread into prepared pan, pausing to top with blobs of Nutella if desired, and bake 20-25 minutes, or until golden brown. (Side note: mine never got as golden as I'd like, but I'm glad I pulled the first batch out when I did anyway, as they were getting close to dry.  I suggest using the cake tester method if in doubt, and remembering that gooey cookies are always better than dry.)

Monkeying Around with Birthday Cakes

When my sister told me that her daughter, who turned three last week, had requested three cakes for her birthday party, I immediately volunteered to bake one of them.  I adore my niece and nephew and have had a blast getting to know them better since moving back from London, but I still see them rarely enough that any opportunity to impress them is worth jumping on.  It only got better when my sister told me the only other request my niece had made: that the party be 'a monkey party'.

I remembered a cake I'd seen on Smitten Kitchen, years back, a monkey face that looked surprisingly easy to put together.  A quick google confirmed my suspicions that this was something I could definitely handle, and I spent the rest of the day at work printing recipes, doubling and tripling ingredient lists, and blocking off the day before the party in my phone calendar.  I was going to go all out this time.

Any Excuse for a Celebration: Half Birthdays and Ha-Cakes

It’s holiday time in the blogosphere – everywhere I look I see recipes for Christmas cookies or Hanukkah cakes or generalized ‘winter holidays’-themed party food.  But I think you’re all forgetting the most important holiday of the year: my friend K’s half-birthday.

Yes, I said half-birthday.  I can’t tell you how many people have balked when I tell them I’m planning to make a half-cake for K.  “Half-birthday?” they ask, incredulous, “isn’t that just for kids?”  Well, yes.  It is.  But one of the things I love about K is that she is pretty much the definition of unabashed.  She wants to celebrate her half-birthday with a few friends, some tasty food, and a ha-cake (as in hapenny, jeez), and honestly I don’t see any problem with that.  It is a bit strange for a grown woman to count her age in halves, to be sure, but on the other hand, couldn’t we all use a little more whimsy and celebration in our lives?  I know I could.

'Paris Is Always a Good Idea' – Dark Chocolate Sables and Some News

As usual, I've been wanting to spread the news about these amazing sables (or, as my French co-worker corrected me, sablés) since I first baked them, but as usual life has gotten in the way.  In face, I have an unusually good excuse: this post is especially apropos because the BF took me on a surprise trip to Paris the weekend after I made these French cookies – and he proposed!  Of course I said yes (if you've been following this blog for a while you know that he and I are already practically married), and have been consumed by wedding planning insanity (on top of work and book promotion) ever since.

Nonetheless, even with a head full of even more things than before (sigh), I still can't stop thinking about these little beauties – ooh, maybe I'll make a batch for the wedding!  Ahem, sorry.  I get distracted a lot these days.  Where were we?  Right!  I can't stop thinking about these sables, so it's high time I passed them on to you all so you can obsess over them too.  Trust me: they're worth the lost sleep.

Beauty Comes from Within: Sexy-Ugly Hedgehog Cookies

One of the BF's favorite kind of cookies is oatmeal chocolate chip, for which he'll hardly get a raised eyebrow from me: the toothsomeness of an oatmeal cookies with the sweetness of chocolate?  Obviously.  I myself am a fan of the good old oatmeal raisin as well, but the more people I poll, the more I feel like this cookie has unfairly fallen out of favor.  Alas, poor oatmeal raisin... well, more for me!

Anyway, when I went to visit the BF in Boston a few weekends ago, I planned on bringing him some oatmeal chocolate chip cookies, but for some reason (I guess because, really, I wanted to eat them), I went with my gram's chocolate chip shortbread cookies instead.  He was never any the wiser, and those cookies are the bomb, so I didn't feel too guilty.  I did, however, find myself craving them the following week (I suppose the idea had planted and refused to let go!), and as I was going to have some girlfriends over for dinner – and needed to make some cookies to mail to a friend for his birthday – I had an excuse to make them.

I Made A Real, Frosted, Layered Birthday Cake (and It Only Took Two Attempts and About a Million Eggs...)!

Last Friday my company had a 'wine and cakes' party in our department, celebrating the first birthday of the imprint I work for.  Now, as someone who often brings homemade baked goods in to the office, I expected to be asked to make something, which I was happy to do.  What I didn't expect was being volunteered to bake a birthday cake, which to most people might just mean a cake but which translated in my head to many-layered cake of wonder with homemade icing and decoration, which is something I'd yet to attempt.  Still, I figured it would be a good opportunity to try something new (namely, making a fancy icing). 
 
But then two things happened to make the plans much more stressful.  The first was that my friend Tess, who works in the marketing department, asked me to use a recipe from one of our books, which wouldn't in itself be a problem but I had been hoping to use a tried-and-tested American recipe, or at least one with tons of online reviews – of course I agreed, though.  And the second thing was that my very well-meaning friends 'bigged up' my baking in a company-wide email.  And of course, as we all know, there's nothing like a little outside pressure to make a cake fall flat.

Signs of Growing Up: My First Meringues

I had a bunch of girlfriends over for dinner a couple weeks ago, and one of them (whom I nonetheless love very much) is a serial dieter.  Not in a fad-diet kind of way, more in a oh-no-I-shouldn't kind of way.  It makes me sad, since I show my love through sugar and butter, but I was determined not to either a) do without dessert at my dinner party or b) make her watch everyone else eat pound cake while she tried not to salivate.  I did a bit of research, skipped a lot of recipes that involved Splenda or other unnatural ingredients (no offense to people who use that stuff, but I always find I can taste the difference, and anyway my dieter-friend is a bit of a purist), and wound up back at Joy the Baker, where I reacquainted myself with a recipe I'd bookmarked weeks before, for vanilla bean and cocoa nib meringues.

Slapdash Baking with Delicious Results: Banana Nutella Pecan Muffins

I wasn't going to write a post about these muffins... They weren't anything special, as far as the process went, just something I threw together to get rid of some old bananas and buttermilk and feed a friend who needed comfort food in her life.  I didn't even plan on adding the nutella until the last minute – as is often the case when I make spur-of-the-moment baked goods, I was ad-libbing the whole time.  For once, I was baking to eat, rather than baking to blog.

Hence the terrible photographs.  I didn't take any pics until after we'd tried the muffins and declared them delicious – moist, banana-y, and chocolatey, with a nice crunch from the pecan bits – and multiple Facebook friends had read my status update and demanded the recipe.

The Best of Both Worlds: Nutella Sea Salt Fudge

I think it's time for a break from attempts at healthiness, don't you?  It's the fourth week of January, after all, which means we've been good for a very long time (well, you have, and I've been trying to support your efforts).  I think this sea salt-sprinkled Nutella fudge is just the ticket for a brief holiday from Healthtown.

Most people have cravings that lean one way or another: toward salty foods or sweet ones.  My mom, for example, isn't that fussed about chocolate or cakes, but put a bag of salt and vinegar Kettle chips in front of her and she'll have to work very hard not to eat the entire sharing-sized container, and then run her finger along the inside creases and lick off the salt.  Similarly, my brother was never as into candy as I was when we were growing up, but he loves a rich, heavy, fried or creamy savory meal. 

My dad and my sister, on the other hand, love the sweet stuff.  When I was in high school, my sister used to always have a drawer full of chocolate-covered fruits from the Whole Foods bulk section, and if you opened her freezer there would be at least two kinds of ice cream, usually Ben&Jerry's and frequently involving chocolate.  And my dad can't keep his hands out of bowls of jelly beans or hard candies (which he chews immediately).

My cravings aren't always butter-related.  Often I crave sushi, or heirloom tomatoes, or noodles.

But if we're going to be really honest here (and I think we should be – this is a safe space for honesty and cravings), I have to admit that the majority of my sudden desires involve copious amounts of sugar, egg, flour, and yes, butter.

Dead Easy: Chocolate Chip Blondies

I love a one-bowl recipe.  Lately, with my MA course ending and changes at my job and this massive manuscript edit looming over my head, all I've been wanting to make are easy, comforting, quick recipes – had you noticed?  With the exception of the lemon cream pie, nearly everything I've made in the past 2 months has come together in under an hour and involved one bowl, a couple of measuring cups, and a (usually lined with foil) baking dish/tray.  Few steps, few ingredients, few dishes to clean up – great result.  That's my kind of recipe.

The Lazy Baker Strikes Again: 'Baked' Brownies For Slackers

The other day, I wanted a snack, but our cupboards were bare.  This is a very dangerous situation.  When we're out of snackables, I usually just eat way too much of everything else (random cold potatoes leftover from dinner, old candies from Christmas stockings, toast with butter and jam at 5pm), but occasionally I'll get up off my butt and bake.  But it has to be something easy and quick, because when I get snacky it usually means I'm either hard at work (scoff) or bored and lazy.  Enter: the lazy version of the 'Baked' brownie.

This recipe, in its original form, isn't even that involved.  But I was looking for super low-maintenance baking.  I toyed with using a one-bowl recipe from Allrecipes, but the reviews were either fantastic or abysmal, and I wasn't really up for taking the chance.  So I went back to this post from Brown Eyed Baker, for the brownies from the book 'Baked', which has been getting a ton of buzz around the food world – especially for the brownies.

Making a great thing even better: Momofuku-esque Chocolate Cherry Cookies

There are times when you think a recipe just can't get any better.  It's gone beyond 'tried and true' to be a real favorite, not just a go-to but something people talk about for days after the product of said recipe is gone.  The ingenious combination of chocolate chips, oats, and dried cherries in a cookie is one of those recipes for me.  People never expect it, and they always rave about it once they've tried it.

But then.  I tried something new with it.  I know, blasphemy, but I was curious!  For months, I've been watching other bloggers try the Momofuku Milk Bar Compost Cookie recipe, and I keep wanting to try it but we never have the required snack foods lying around (mostly because on the rare occasions that we do, I eat them all before I can think of doing anything else with them).  But last week, I really wanted to bake something special for my porter – who'd saved me in a really horrible, ambulance-requiring moment – and I decided on my awesome cherry chocolate cookies, with a Momofuku twist.

A simple pleasure? Making my own Peppermint Patties

Somehow the simplest things in life always seem the most difficult for me.  A box brownie mix turns out dry and flavorless; grilled chicken ends up pink on the inside and charred on the edges; a walk down the block to buy milk results in a turned ankle, my dress hitched up into my underwear, and tears running down my face half an hour later.

Seriously, I don't know why it's so hard.  I can make a Thomas Keller recipe, do a perfect tree pose in yoga, and write a freakin book (two, if you count my shelved novel), but I can't cook the simplest things or perform the most basic tasks.

Sometimes, I'm hit with a stroke of genius.

And then, more often than not, I fail to execute my genius perfectly...and my fabulous idea turns out...not as fabulous as I'd envisioned.

BUT, sometimes, even though it's not what I expected, it's still delicious, if crumbly/messy, and the bf still eats it all.  This was one of those times, and thank goodness for that because wasted chocolate chip cookie dough is a travesty.

When in doubt, throw in some chocolate!

I made muffins for class the other day. I wanted to bake something, but I didn't know what.  I didn't really have time for cookies or cake or anything that required multiple steps, and one of my classmates is dairy-intolerant, which can be a difficult work-around with some baked goods, so I went with muffins.


I didn't really have a plan.  I had a basic muffin recipe, for which I swapped water for the milk, and I had some spotty bananas.  So I just kind of winged it.

Another famous recipe from Gram: Mexican Brownies!

Remember those cookies I told you about a while back?  The ones that are amazingly delicious and addictive but a little finicky?  Or the pumpkin pie, which basically put my mom's family on the map, baking-wise?  Well, they're not the only recipes my grandmother handed down– the trump card, her ace in the hole, the ultimate indulgence, was her recipe for Mexican Brownies.


Now, I know I say 'ridiculous' a lot, but this time I mean it.  These things are ridiculous.  I mean, a whole box of powdered sugar for the frosting?  Buttermilk AND margarine in the cake?  This is serious stuff, guys.  Sugar overload, and it hurts so good.

Continuing the Workplace Takeover: Chocolate Peanut Butter Puffs

Now this is a stroke of genius.

Shop-bought puff pastry, peanut butter, and chocolate chips; a pizza cutter (or sharp knife) and a rolling pin; an oven.  Add a half hour's attention and minimal energy (and, more importantly, minimal dishes!), et voila: Chocolate peanut butter puffs!
